This flavourful tempeh recipe is perfect for a quick meal. The tempeh is marinated, seared, and glazed in a homemade teriyaki sauce. Serve it with rice or noodles for a wholesome, satisfying dish.
Serves: 2
Cooking Time: 20 minutes
Ingredients:
For the Tempeh:
200g ProTempeh
2 tbsp coconut oil (or rapeseed oil)
Tempeh Marinade:
3 tbsp vegetable broth
1 tbsp tamari (or soy sauce)
½ tsp garlic powder
¼ tsp onion powder
Teriyaki Sauce:
4 tbsp tamari (or dark soy sauce)
1 tsp sesame oil
2 tbsp maple syrup or honey
1 tsp sriracha (or hot sauce)
1 tsp rice wine vinegar
1 clove fresh garlic, minced
½ tsp corn starch (optional for thickening)
¼ tsp liquid smoke (optional for smoky flavor)
Method:
Steam the Tempeh (Optional): Cut the tempeh into triangles or squares. Steam in a steamer basket for 10 minutes for extra tenderness and flavour.
Prepare the Marinade in a bowl, whisk together all the tempeh marinade ingredients. Place the steamed tempeh in a dish and pour the marinade over it. Let it marinate for at least 20 minutes.
Sear the Tempeh: Heat 2 tbsp of coconut oil in a pan over medium heat. Sear the marinated tempeh for 3-5 minutes on each side until it turns crispy and golden brown. Set aside.
Make the Teriyaki Sauce: In a large bowl, mix together all the teriyaki sauce ingredients.
Glaze the Tempeh: Once the tempeh is cooked, add it to the bowl of teriyaki sauce, ensuring each piece is well-coated. Remove the tempeh from the sauce (reserving the extra sauce) and add it back to the pan. Sear for about 30 seconds on each side to caramelize the sauce on the tempeh.
Finish the Dish: Turn off the heat and pour the remaining sauce over the tempeh in the pan. Let it sit for about a minute to allow the sauce to thicken slightly.
Garnish and Serve:
Garnish with sesame seeds and chopped spring onions (optional).
Serve with rice or noodles.
Enjoy the bold flavours of this teriyaki tempeh dish!
